Cannabis Muffins with Chocolate Chips

   Preheat and prepare the pan Timer 5 min

   Preheat your oven to 180°C (350°F), or 190°C if using a conventional oven without fan. While it heats up, place paper liners into each cup of the muffin tin. If you don't have liners, grease and flour each cup generously. Do this first so the oven is fully up to temperature by the time your batter is ready.

   Mix the dry ingredients Timer 5 min

   In a large bowl, combine the flour, sugar, baking powder and salt. Whisk well with a hand whisk to distribute the baking powder evenly throughout the flour. It's a step that's easy to rush, but it's what ensures your muffins rise evenly.

   Prepare the wet ingredients with the THC and CBD oil Timer 5 min

   In a second bowl, beat the 2 eggs with the sugar until the mixture is slightly frothy. Add the milk, melted butter (warm, not hot), vanilla extract and the full bottle of Space Cake THC and CBD oil. Whisk everything together until combined. The oil blends perfectly into the liquid phase of the batter, ensuring consistent dosing in every muffin.

   Fold in and do not overmix Timer 5 min

   Pour the liquid ingredients into the bowl of dry ingredients. Fold with a spatula using slow, lifting movements from the bottom up, just until the flour disappears. The golden rule of muffins: you are not aiming for a smooth batter. A few lumps are normal and welcome. Overmixing develops gluten and results in rubbery, dense muffins. Once the flour is almost incorporated, add the 150g of chocolate chips and fold in no more than 3-4 times.

   Fill the molds and bake Timer 5 min

   Fill each liner three-quarters full with batter. Use an ice cream scoop or two tablespoons for even portioning: this matters so each muffin contains the same amount of batter and therefore the same THC and CBD dose. Scatter a few extra chips on top if you like. Slide the tray into the oven immediately.

   Baking and checking Timer 5 min

   Bake for 20 to 24 minutes without opening the oven door during the first 15 minutes (the temperature drop makes muffins collapse). From 20 minutes onward, test with a toothpick inserted in the centre: it should come out clean or with just a few moist crumbs. Muffins should be golden on top with a well-formed dome. Remove from the oven and let cool in the tin for 5 minutes before turning out.
